Here it is, as originally posted by Catherine. It is so good and easy!!

Cheeseburger N Fries Casserole Very Good
6 servings 6pts

1 pound extra lean ground beef 4% fat
10 3/4 oz Campbell's (U.S.) Golden Mushroom Soup
10 3/4 oz Campbell's (U.S.) Cheddar Cheese Soup
20 oz Ore-Ida Golden Crinkles
( also added I onion and 1 pkg mushrooms)

Instructions
1. In a skillet, brown ground beef then stir in soups.
2. Pour in a 13x9 pan sprayed with no stick spray.
3. Arrange fries on top.
4. Bake, uncovered, at 350* for 50-55 minutes or until the fries are golden brown.

No problem!

I've made the recipe like 6 times since it was originally posted, even DH makes it. We use ground turkey instead though, use cream of mushroom soup instead of the golden mushroom soup, and I don't add onions/mushrooms b/c some of my boys don't like them. It still turns out great though!

Is there a tequilla club I could join?? I'd settle for rum though.

Yeah I do cream of chicken or celery instead of mushrooms (can't stand them) and then I'll add in onions, bell peppers, rotel and I'm going to try shredded carrots next time.

I think I'm making cheeseburger soup this weekend. Seems easy and its in the crockpot.

OOOH, please post this recipe too! I love crockpot dinners...lately I hate to cook , did I say HATE? I'd much rather go out to eat but it's not very healthy.

That sounds like me with my upside down pizza recipe! Sometimes I do 1/2 whole wheat flour, I use ground turkey instead, sometimes I throw in chopped zuchinni, peppers, whatever I have on hand. It's rare that we have it the same way twice!

Upside-Down Pizza


1 pound ground beef (or ground turkey)
1/2 medium onion, chopped
1 jar (14 ounces) spaghetti sauce
2 cups (8 ounces) shredded mozzarella cheese
1 cup milk
2 eggs
1 teaspoon vegetable oil (I use canola oil or even olive oil)
1 cup all-purpose flour
1/2 teaspoon salt

In a large skillet, cook beef and onion over medium heat until the meat is no longer pink;drain. Add spaghetti sauce.

Pour into a greased 13-in. x 9-in. x 2-in. baking dish. Sprinkle with cheese.

In a blender, combine the milk, eggs, oil, flour and salt; cover and process until smooth. Pour over cheese layer.

Bake, uncovered, at 400 for 25-30 minutes or until golden brown.

Yield: 12 servings.

Nutrition Facts: 1 serving (1 cup) equals 225 calories, 12 g fat (5 g saturated fat), 79 mg cholesterol, 373 mg sodium, 14 g carbohydrate, 1 g fiber, 15 g protein.

Carrie, that upside down pizza sounds yummy. Gonna give that one a try!!!

I have this one that I make for my kids. It is kinda cheap and better for you than fried chicken.

Potato Chip Chicken Fingers

I save almost empty chip bags in a big ziplock bag until I am ready to make these for dinner. The kind of chips don't really seem matter. Over the years each kid has their favorite chip. I would have to say that cheetos and sour cream and onion are the favorites. But I usually have about 4 different kind of chicken strips. Any favorite chip will work!!! I have even used sun chips and it was so yummy!!!

Chicken breast cut into strips
crunched up chips(I pour each kind of chip in the bag and the kids will crunch them up.)
Shake chicken in bags of chip crumbs ( you may even want to kinda smash them around so it gets the coating all over it!)
bake until done-turning about halfway through

I know this seems kinda scattered, but cooking time is really gonna depend on how thick your strips are. I line my pan with foil so they don't stick as bad.
I serve this with wild rice and roasted veggies, instead of the usuall mashed potatoes and gravy!!

I don't have a calorie count or anything. But it does not take a lot to cover the strips so it can't be that bad!!

Ooh I'm trying the upside down pizza tomorrow. It sounds yummy and just the recipe I was looking for.

Oooh just made the upside down pizza - it was delish!!! I think next time I'm trying a jar of pizza sauce since the ragu was a little too spagetti tasting for me.
